You need a frying pan, a whisk, a tray with baking (greaseproof) paper cut to fit it, and a spoon or spatula or other stirring implement.

You need:
Oil (Canola or Vegetable or Corn are all preferable)
Tortillas, preferably stale, or left out overnight to dry out a bit, quartered or cut into 6 wedges
Salsa (red or green)
Optional:
Cheese
Cilantro
Radishs chopped
Avocado chopped
Red onion chopped
Recipe: 
 In a large sauté pan, coat pan generously with oil, (1/8 inch), heat on medium high to high. When the oil is quite hot, add the tortillas, fry until golden brown. Remove tortillas to a paper towel lined plate to soak up excess oil. Sprinkle a little salt on the tortillas. Wipe pan clean of any browned bits of tortillas.
Add 2 Tbsp oil to pan, bring to high heat again. Add the salsa and let salsa cook for several minutes. Then add the fried tortilla quarters to the salsa. Gently turn over the pieces of tortilla until they are all well coated with salsa. Let cook for a few minutes more
Add whatever garnishes you want, I like cheese and cilantro. Serve with a fried egg and/or refried beans for extra protein!!

Sweet Potato Burrito

The ingredients in this can vary depending on what you like/have but it’s super easy and delicious!

Main ingredients:

  • a large sweet potato
  • a can of black beans
  • a can of corn
  • a red or green pepper
  • a red onion
  • soft tortilla(s)
  • salsa

Optional ingredients:

  • shredded cheese
  • avocado
  • sour cream
  • any other veggie you think would be tasty in it

Directions:

Dice the sweet potato and put it in a large frying pan with some olive oil. Cook for about 5-7 minutes or until the chunks are soft. If the outsides are getting too crispy I usually cover the pan for a little while too.

Dice the pepper and the onion and add them to the pan. Add olive oil as needed. Cook for another 5 minutes or until the onions get translucent. Throw in the black beans and corn, and cook for another minute or two. At this point I usually throw in some salt and pepper to taste, as well as a nice amount of cumin and chili powder.

Keep the pan simmering while you microwave a soft shell tortilla to warm it up. And then just load up your tortilla, and top it off with some cheese, avocado, salsa, whatever else! It really doesn’t take long to cook and you can probably get like four burritos out of it with leftovers!!
